Q: We are well and truly in ‘cosy season’. The clocks have gone back, the hearty recipe books are out, the candles are lit across the house and we of course always have a sophisticated glass in hand. Can you tell us what your idea of a perfect November’s day/evening is?
I love Autumn and the change of the season - especially the autumn squashes. On a typical Saturday I will visit the farmers market in the morning - I hope to pick up wild mushrooms this weekend as we are in peak mushroom season, followed by a light lunch in town (I recently moved to Bath which has many cosy cafes) followed by a long afternoon walk in the woods or long the canal before meeting friends for an early evening drink with afore mentioned sophisticated glass in hand, before going home and making a comforting bowl of pasta with the farmers produce, lighting the fire and watching a film (ideally horror for me).
Q: What about your hygee handbook. Can you set the ambience and scene for a November night in?
I have warm dimmable lighting so I keep the lights turned on low or use lamps, light some candles as well as the fire, and have a pile of wool blankets for snuggling up on the sofa. I make sure the temperature is cosy and make sure my cat is around for additional hygee feels. As we approach festive season, does this vibe differ when having guests round for dinner during November and into the festivities? When I have guests over I tend to dial up the candles and the drinks. My speciality is making non-alcoholic drinks so I usually have a variety of homemade cordials, shrubs, extracts, kombuchas and sparkling teas which I blend to make cocktails. Usually the guests who bring wine will move over to my option by the 2nd or 3rd glass. This summer I was making a strawberry & balsamic cordial and pairing it with our Sparkling blush.
Q: We’ve been really focusing on mindful rituals this year that have felt more sustainable across the entire year. Do you incorporate mindful rituals into your life (structure of the Mon-Fri is you want to talk about this here?)
My essential daily rituals include going to barre or pilates at a beautiful bright studio close to my house, making sure to romanticise at least one wfh lunch per week, and I love to have a drink around 6pm when I’m preparing dinner. My Monday to Friday drinks run along these lines: On Monday I drink Jamu which is an Indonesian tonic made with turmeric, ginger & lime with L.A ginger, on Tuesday I will drink Strawberry & Peach shrub with our Sparkling blush, on Wednesday I like to have a hedgrow syrup made from the autumnal wild fruits (elderberry, rosehip, hawthorn, wild plum & apple) and blend it with our Citrus Hops. On Thursday I like to drink the Sparkling Rose with a slice of lime ending on Friday with a glass of sparkling blush on its own like a summer rosé. I might drink one two nights running but it more or less runs like that.

Q: Focusing more on our drinks this season. What is your perfect drink in your range and perfect setting to enjoy it?
I think I have probably answered that above! But I like a glass of our Ginger with my lunch in the week and I love the Blush of an evening at dinner with friends because it reminds of summer.
Q: A perfect drink is not complete with perfect glassware. How important do you think glassware is to our drinking experience and what do you like to use?
For me the glass is the most important thing alongside temperature. I love wine glasses and it takes me straight to my evening ritual. Having a good size bowl in a wine glass allows me to enjoy the aroma as I drink which is 50% of tasting a drink. I also like to make sure all drinks are served around 5 degrees as that makes a big difference too.
Q: Food isn’t a necessity to enjoy a glass of L.A Brewery but boy does it pair well. What dish are you going to be cooking at home or for your guests this November?
Bucatini with wild mushrooms, parsley and parmesan. So simple but so delicious (using lots of butter and garlic with the mushrooms). Delicate squash, burrata & lambs lettuce salad. Those are my two current favourite oct/nov dishes.
Q: Finally, what is something on your Christmas list to receive or to give this year that you are most excited about?
Good question. I would like a sage always pan, and a home pasteurisation kit. Pricey but we live in hope.
